I have lots of bookmarks nowadays, and they are structured into categories. Is there a way to have a more structured bookmarks menu? Right now, it's a simple list.

Add a function that feeds the bookmark list to `completing-read`. With completion frameworks (ivy, helm, vertigo…) fuzzy searching to open bookmarks is quick. If you share a snippet of your list structure, it gives us a better idea of its format.

`consult-bookmark` from `consult` package lets you define multiple sources of bookmarks, usually by type.

I find that Hyperbole + org mode works quite well as an organized comprehensive bookmark.

(By "bookmarks menu" I assume you mean the bookmark-listing display - what you see with `C-x r l`.)
With [Bookmark+](https://www.emacswiki.org/emacs/BookmarkPlus) you can have any number of bookmark-listing formats/structures, including which bookmarks (which kinds etc.) get listed and how they're listed.
And you can bookmark those different listings, i.e., use bookmarks to switch among them.
And there are bookmark commands that show different kinds of listings.
And you can easily filter, reorder, etc. a listing on the fly. And then save/bookmark the resulting structure/properties/appearance.
Here are some sections of the doc that talk about the bookmark-list display, to start with:
* [Bookmark-List Display Feature (Overview)](https://www.emacswiki.org/emacs/BookmarkPlus#BookmarkListImprovements)
* [Saving and Restoring Bookmark-List Views](https://www.emacswiki.org/emacs/BookmarkPlus#BookmarkListViews)
* [Bookmark-List Display (Detailed Description, Use)](https://www.emacswiki.org/emacs/BookmarkPlus#BookmarkListDisplay)
----
A more general question, which may be behind what you asked (which was only about the list display, IIUC), is how you can organize your bookmarks into helpful, usable, sets/categories. With Bookmark+ there are several features that help with this, and they can be used in combination. A display list is only one way.
***[Tags](https://www.emacswiki.org/emacs/BookmarkPlus#BookmarkTags)*** are a particularly important, flexible, and powerful feature for organizing sets of bookmarks. They can give you [hierarchy or graph structures](https://www.emacswiki.org/emacs/BookmarkPlus#HierarchicalBookmarkStructures) of bookmark sets - or any other kinds of structures you like.

How about the built-in `bookmark-jump`? All you'd have to do is name the bookmarks according to the format "Category - Subcategory - Title" or something like that.
