So first, Eglot + clangd + company don't insert function arguments for me. Company used to do this for me when I was using gtags. I've checked my config options, and I have ALL of the optional server capabilities turn ON and I've got \`Company Clang Insert Arguments\` set to \`on'. I'm not sure what else to check. (Emacs 28.0.92 on Windows).
Second, is there a way to turn on completions for the class I'm working on without typing \`this->\` first? If I want a member variable and I don't remember the name, there doesn't SEEM to be something that lets me implicitly ask for just the class variables and functions. If I start a company completion, it gives me a much broader list of completions, which can be very handy, but usually the list is too big and generic.

You probably need to install `yasnippet`.

Welp, I just tried doing that from melpa and everything broke. I have no idea how installing something from packages could be so catastrophic, but eglot won't jump to definitions anymore and company has stopped completing in C++ files. I've uninstalled and removed yasnippet, but everything is still jacked up. Sigh.
Edit: things are starting to come back; I think the change invalidated all of the clangd lookups and they're being rebuilt now.

:-(
You can try posting the exact errors you are seeing.

Everything was just timing out and the xref commands weren't working. Company was probably failing to complete because eglot was failing to find any info.
It's fine, I'll tinker with it some other time...after I've backed up all my files so I can get back to a known good state after. :)
Thanks for the advice, though!
