Hello everyone,
When I use control +/- I can only zoom in up to the font size I set in \~/.doom.d/config.el (doom user here) then it just says "The font hasn't been resized" (not big of an explanation).
I zoom out and on the right bottom corner it tells me how many "steps" I zoomed back ( (-1), (-2), etc.), and when I press C-+ even just one time it takes me back to "0" ie the default font size I set.
This what I have in my config regarding fonts.
;; ----------- FONTS -----------
;; main font stuff
(setq doom-font (font-spec :family "Comic Mono" :size 24)
doom-variable-pitch-font (font-spec :family "Ubuntu" :size 24)
doom-big-font (font-spec :family "Comic Mono" :size 24))
;; make italics and bold show without the slash and asterisk (not working)
(after! doom-themes
(setq doom-themes-enable-bold t
doom-themes-enable-italic t))
;; italic comments and keywords (not working)
(custom-set-faces!
'(font-lock-comment-face :slant italic)
'(font-lock-keyword-face :slant italic))
I'm sorry if the question is high noobeness, I'm not very practical with this and I don't have any idea of how to move forward. I love editing org files in emacs though, so these headaches are worth it.
Thank you all.

That message only appears in the `doom/reset-font-size` function, which is bound to `C-+` by default.
Try `M-x text-scale-increase` (`C-=` by default) to increase font size.

Thanks man! that worked.
So now I'd like to unmap `C-+` from `doom/reset-font-size` and change the kb for `text-scale-increase` from `C-=` to `C-+`.
Can you please tell me what would be the right way to do it?
Doing `C-h k` then `C-+` I can see that it is defined in the variable `evil-normal-state-map`, which by looking it up with `C-h v` I can see is defined in `evil-states.el` which is down in the `~/.emacs.d` rabbit hole noob hell directory.
Is editing that file best practice? I'm on doom emacs and I'd much prefer to specify this in `config.el` and never touch anything inside `~/.emacs.d`.

Here's a snippet
;; ~/.config/doom/config.el
(map!
:n "C-=" #'doom/reset-font-size
:n "C-+" #'text-scale-increase
:n "C--" #'text-scale-decrease)
Generally, these kinds of questions are answered in Doom's docs. The catch is Doom is on the way towards version 3.0, and the docs lag behind breaking changes and features it introduces, though most basic things are still relevant.
That being said, here's the list
