I use lsp-mode, but every time I open a project I see that dap-mode is t. I tried putting (setq dap-mode nil) everywhere, but it is always set to t when I open a project.
How can I disable this and why hasn't that been working setting the variable?
Also, any other suggestions on things to disable to improve lsp-mode speed?

dap-mode does not affect lsp-mode's speed except for load time.

That is not variable. This is a mode. It doesn't work like that. You may set lsp-enable-dap-auto-configure to nil and lsp-mode won't configure dap-mode.

in Emacs you can almost never disable a mode by setting its variable directly, you need to enable or disable it by using its command. in Lisp, this looks like:
(example-mode 1) ; to enable a mode
(example-mode -1) ; to disable a mode

This variable is holding whether dap-mode is enabled

The variable is one of several things that are part of the minor mode. A minor mode needs to have a variable that indicates whether it is on or off, which drives the modeline display. It also defines a command to turn the mode on and off, which sets the variable and does anything else needed to activate or deactivate the mode.
