Right now I see my name in the the label column (pdf-annot-list-annotations) - Emacs or pdf-tools put it there for some reason. I don't want that to happen.
How to make Emacs to use no name or change my name to something else than my real name?
Ideally I l would like to add some note for the note instead my name.
Any idea how to do this?

Remove the label property from pdf-annot-default-annotation-properties.

I can't find this function. When I do \`C-h f\` to describe function and then start typing \`pdf-annot\` I get 100 results. When I continue with \`pdf-annot-de\` I get this: [https://i.imgur.com/qcoVbSf.png](https://i.imgur.com/qcoVbSf.png) . I see no \`pdf-annot-default-annotation-properties\` function there.

Did you try C-h v?
[ When someone throws you a symbol w/o mentioning its "type", then it is a good idea to use C-h o. ]

Wow, thanks I found it. It works.
One more question. How to edit those things, for example, I have noticed you can add custom key value pairs for other things not only label.
But how are you able to add the value later.
For example, I create an annotation in my pdf and when I have 20 or 50 I don't know what is what, so I would like o have some names for each one.
How to do that?

Use `customize-option`. It's part of Emacs's customize interface. You may also like, `M-x customize`, `customize-group` and `customize-apropos`.

All I want is to be able to:
1. make an annotation -> this is possible now
2. click or do something else on the newly created annotation in the annotation list and change the label value to e.g. "description of an embryo"
Right now I don't know how to do the 2. part.
Do you know how to do that?

Sorry I was mostly replying to the question about the variable, and not the annotation question specifically. I don't use pdf-tools -- sorry.
