Do you mean the size of the rendered text vs. normal Org mode text? Haven’t tried it myself but you could probably do `M-x customize-face` on the thing you want to change then set the Height property to scale it. E.g. 0.9 will make it slightly smaller, 1.1 slightly larger.

I am not sure if I understand the question, but my crystall ball tells me that you need to customize `org-format-latex-options`.
