I'd like to disable LaTeX preview for itemize and enumerate environments. How can I do that?

Do you mean that it is currently generating previews for the entire itemize or enumerate environment, and you don't want that?
If yes, that's not the default behavior, you should check if your latex document has something like `\PreviewEnvironment\*{itemize}`, and remove it.
Or do you mean that you don't want to generate previews for the maths that appear in an itemize or enumerate environment?
In that case, I don't know the answer.
