I’m a fan of org-mode but I feel I can’t have full control of Latex document (like import latex template) as when I work with Overleaf. It could be great if you guys can share your org-mode config file. Thanks in advance!

Try the `auctex` package (built in) for total control of LaTeX without leaving the comfort of emacs. It is magical.

I recommend using a regular latex file, with `outline-minor-mode` to collapse stuff.
What org feature do you think will be useful for writing such a document?

Check out the `org-ref` package. Easy references, labels, refs etc.
This article is quite comprehensive: http://www.wouterspekkink.org/academia/writing/tool/doom-emacs/2021/02/27/writing-academic-papers-with-org-mode.html

I once wrote a demo-paper in 2012 for a conference, demoing the ability of Org-mode to generate a paper from the raw CSV data to the final ACM-compatible whitepaper in one go: https://github.com/novoid/orgmode-iKNOW2012
Tech-wise, this was not maintained and thus probably may not work 100% as back then. It lacks org-ref which we got only recently. However, it proves the point.

No, I use AUCTex. I want to see the source I'm working on and have complete control over it, no need for another layer. I do use org to create (beamer) slides though, it's a different and simpler problem.

Yes. It’s not a problem (it’s also easy to write papers in markdown using markdown mode). If you want to see some of the packages involved look at my setup-writing.el, setup-org, and setup-citation files in [my config](https://github.com/mclear-tools/dotemacs).

Check [The Kitchin Research Group page](https://kitchingroup.cheme.cmu.edu/blog/2014/08/08/What-we-are-using-org-mode-for/) for books, scientific papers, blog pages, etc. written in org-mode. Also, [scimax](https://github.com/jkitchin/scimax) is a very good clone for academic usage of org-mode.
