Greetings,
I'm having issues getting Eglot working with python-lsp-server in regular Emacs.
Anyways, others recommended that I try some Emacs Distros like Doom and Spacemacs, because things like language servers work out-of-the-box.
So which Emacs Distros would you recommend for this use-case?

Try them for yourself and see which works best for you. You're going to get a variety of answers which boil down to basically the following:
"I recommend X. It works for me!"
"They both work good!"
"Really, you shouldn't use either of them! You should be doing X instead!"
You can find all of this in [previous discussion](https://www.reddit.com/r/emacs/search?q=doom+vs+spacemacs&restrict_sr=on&include_over_18=on).
However, it's unlikely any of these answers will actually help you determine whether or not a configuration is useful for you. Trying them will, and if you run into any problems you will be able to ask a concrete question others can help with.

Someone should make a repository of all the advantages/disadvantages of every repo

If you think it would be a benefit, go for it. I personally don't.

Doom is very useful and performant, and it can be as lightweight as you want by removing packages or entire modules. It has a Python module which will make things easier for you. AFAIK, it doesn't use eglot. See for yourself here: https://github.com/hlissner/doom-emacs/blob/master/modules/lang/python/README.org
And this is the Spacemacs Python layer: https://www.spacemacs.org/layers/+lang/python/README.html.
Personally, I prefer using Elpy instead.
