I have such setting for face-attribute:
(set-face-attribute 'org-headline-done nil :strike-through t)
and try to strike the DONE job as:
>\* DONE Strike through done jobs.
but it display as:

The tag "DONE' is left not struck through.
How could get them all struck through, better if star \* symbols are also considered.

You could also customize the face `org-done` -- the face that goes over DONE -- to have a strikethrough on it. I don't think it would cover the space after DONE, though, nor the header asterisk.

You need to fontify the entire heading for this to take effect:
(setq org-fontify-done-headline t)
Then `M-x org-mode-restart` for Org to pick up the changes.
