Is pentesting just running a bunch of different tools to gain access to systems? Just chaining different exploits together? Do pentesters do any vuln research?

Depends.
Are you an expert and paid a huge amount, giving permission to do anything? Then maybe you craft your own tools for the job, will social engineer your way into getting access to the office, and break into the CEOs house and cold boot attack the ram of his personal computer. Anything-might go, in theory.
Routine job? Run some typical tools, write a report, do a compliance checklist, just following the motions.
