What are some good methods for recording/taking pictures of people or things in public secretly? Either with a full sized smart phone or even a dedicated "spy" camera made for just that. I think there are sunglasses that have a camera in the center of them but that's a little bit over the top I feel. I was thinking of maybe some sort of jacket front pocket with a case like slot inside of it and a cut out for the camera lens of a smart phone. Though you would probably need to premeditate the encounter in that case a little bit to starting recording, then place it in the pocket.
I find the idea of having the body equivalent of a dash cam interesting. The problem is smart phones run hot and you'll drain your battery, maybe some sort of compact micro camera might be worth looking into. I welcome any brain storming on this topic since I'm out of my depth when it comes to cameras and even smart phones.

This. And just hide far enough.

Well I think it depends, especially if the target of the photoshoot knows you or not.
If not the tourist attire is a very easy to do, especially in big cities where everyone with a compact camera will look like a tourist. I've used this to do street photography and never had any problems even taking portraits of people with a fairly wide lens (meaning I had to get really close to them).
On the other hand a telephoto lens is useful, but be careful since people tend to give more attention to big cameras and sometimes consider people carrying them perverts.
Another solution could be a concealed compact camera or camera phone with a remote shutter. The possibilities are endless in such a setup, though your composition would be often off. An ultra wide lens would be preferred for this setup, something fish-eye like an action camera could work.

You can use those sunglasses with the camera in them.

Use a DSLR with a very high magnifaction lense and conceal yourself far away from your subject

Something like a GoPro would be able to record for a long time, while still being fairly discrete, meaning you avoid the issue of having a trigger.
If you go the compact-camera route, I'd suggest something like a pack of cigarettes to act as enclosing. You can stick it in a pocket on a shirt, and no-one bats an eye.
Some compact-cameras are made for use by a something like a pi, and you can just activate it by setting a signal high. For ones that aren't designed like that, you might need to delve into the hardware to create a remote trigger.

Literally everyone knows about the glasses and the camera is really obvious on them unless someone is at a distance and near sighted
