In the name of our mother Lain! Hello lainons, I would like to ask you what good software there is for converting files, as well as sites with videos of all sorts of interviews.

Converting audio or video? For video, ffmpeg is usually the software that's being used at the backend, you should already have it. If you want a GUI, try Handbrake. For audio, SoX is the best IMO, but it's another command line program. There are all sorts of decent audio converting tools like dbpoweramp and even foobar2000.
Interviews? Have you tried Youtube? Don't forget to check archive.org

I assume you only mean videos, but I'll cover both:
>ffmpeg
for videos, audio, and gifs
>exiftool
for most metadata
>imagemagick + gimp
for images
