Does anyone know of a plotless stream-of-consciousness book? A book with no real story, conflict, or critical events, just the narrator recounting their perfectly ordinary days, following their own routine with little variation. Not the sort of book where the narrator is a fruit or interesting— just where they're more-or-less normal. Preferably the narration should be in excruciatingly boring detail, with pretty much every wandering thought and minuscule task the person does every waking moment of their day.

why would you want to read a book like that? Literature's meant to explore a breadth of ideas and concepts but it sounds like you just want to read somebody's diary.

Nausea, by Jean-Paul Sartre.
At least that's the premise of the thing. There is a semblance of a plot, of drama.

The Mezzanine by Nicholson Baker is pretty much as close to this as you're going to get. it's just about a guy's lunchbreak. what you get from it might vary, but that's what it fundamentally is

L'etranger by Camus feels a lot more like this
