I couldn't decide which board would be best suited for this topic, but considering it's human, I'll leave it here.
From what I've researched so far, there are very few public human dissection videos on the internet for reference. I've seen a couple sites with the videos locked behind a student account or a paywall. I'm aware of 3D models and sculptures, but I would much prefer the video format of real human specimens.
Is there a collection somewhere with each part of a human body addressed? Both male and female, of the human species. I'm not in biomedical, and I don't really speak to other people at my university, so I can't really go through that.
However, I'm sure I'm not the only Lain interested in anatomy for the purposes of biohacking, curiosity, etc.

Why not just get a good medical anatomy textbook? Some have detailed photographs in addition to illustrations.

Greys Anatomy is still probably one of the best reference texts in the field.
There was some artistic merit in the dissection of people, but if you are looking for biohacking, surgery reference videos might provide a more detailed. reference. Idk how you were searching, but I found about a hundred 20 minute videos where people dissect humans and explain what they are doing and how the body works together. Try searching keywords like autopsy, human, anatomy.

I searched through YouTube at first, only yielding a handful of results which I've all watched, then through search engine a few academic sites with videos, although they didn't give the information that I was looking for. In depth, I guess, but not the details specifically I was looking for.
I guess a replacement would be asking for a legal way to get human specimens for my own hands-on dissection. I'm not sure if medical institutions in my area will just give out bodies if I ask. I also would rather not go through the black market.

This is an interesting topic for me too.
I took Anatomy classes at university some years ago, but due to limitations regarding the size of the installations and the lack of certain permissions we never made an autopsy.
Our professor (doctor in Medicine) insisted that autopsies were important for a better understanding of Physiology, yet we had to relay on books.
To be honest, I was not very interested at that time, so I limited myself to do some research on classification of bones and muscles.
Today I searched "autopsy videos" on Duckduckgo and surprisingly a youtube channel dedicated to dissections appeared, among many other resources, yet I would understand if some information is still missing online.
I think biohacking is a rather big discipline, but if you want to manipulate how your body works you may get better results studying Physiology directly through books instead of Anatomy (many physiological processes are invisible anyway), unless you want to do something more mechanical, like exoskeletons or prosthesis.

Or look into human anatomy art books, though their focus is more mechanical and superficial.

If you're just interested in learning human anatomy there are online resources using real subjects, even if it's not exactly what you're looking for.
Radiopaedia is a database of radiology scans on patients organised by bodily system. We use this in anatomy labs so it's very recommended.
You can scroll through the whole body with an MRI and see all the arteries and veins if there's a contrast agent. This would really help you learn, especially with examples of pathology.
An important note is that MRIs are always viewed as if you're looking through the person's feet. Probably best to have an anatomy reference just for orientation, although they're all the same quality if they're general enough.
Apart from that it's so hard to find modern instructional dissection videos because of the laws now. Cameras are completely prohibited just being in the building
