I had a dream that I put 5 cellphones in hotspot mode and put a load balancer wifi access point thing in front of them to get more bandwidth. Is such a thing even possible or was it just a stupid dream?

Just do a multipath TCP reverse proxy and instead of load balancer do a multiplication of speeds

Yes, it's limited because of radio medium, OP scheme is about to compete with other cell users, so if there's no other stations in a cell theoretically you're not getting anything.
