Anything thay would help me save content privately without depending on some sorta account, but at the same time help me not loose my data once my phone is taken down the river stream or ran over by a car? Ideally, I thought it should be something that has a client side (runs in android) and a server side (runs on my windows machine, I have static IP) and saves data immediately when changes are made. I use Telegram Saved messages now and its insanely good, but I don't want FSB messing with my sensitive data and there was a precident when Telegram just deleted my account along with all data unexpectedly, I suspect it was because of voIP number (my main account has my real phone), but still, I don't trust Telegram anymore.

The title should have been: a good local notes app for android/iOS that isn't goolag keep or apple notes

like >>70581 said, use a notes app which you host on a VPS/home server. Personally I host a nextcloud instance on my server and find it very useful for notes and the occasional file sharing. that being said it is a little bloated and you could probably find a more minimalistic one. Something that may work is just using a terminal emulator on your phone and create a script which ssh's into your server and edits a note file
