I want to build a sumo robot for a competition. Do you have any guides, books, or videos on how to choose electronics, motors, etc.?

No but if i were you i would:
1: use a stepper motor.
a normal motor's torque is proportional to the rev. A stepper motor's torque is the largest at low revs and can very powerfully stand in one position, aka resist attempts to spin it (resist pushing by the opponent robot)
2: use capacitors for extra high power short impulses, which would be great for pushing opponents off, without making the robot heavy with a high amper battery. gold smoke capacitors have very huge capacity without being very bulky.
3: use high grip soft tyres on the wheels. natural rubber for example.
4: i would make it microcontroller operated, so changes to the behaviour of the robot would only need firmware update, not hardware changes. STM32 microcontrollers are small and powerful without being expensive or energy consuming.

How would I use a stepper motor for locomotion? I don’t think it’s suitable for that purpose.

Why do you think that? It's perfectly suitable for locomotion. It's not ideal if you need high speed and high rev, but in the case of robot sumo, i assume low speeds and high torque are needed, in which case a stepper motor is ideal. The electronic controller is of course more complex for a stepper motor than a normal motor, but i assume if someone is building a robot, he can handle controlling a stepper motor. Dedicated stepper motor controller chips are also available, btw.
